Food does more than provide energy. Every meal also delivers chemical signals that cells can detect within weeks.
Those signals do not rewrite the genetic code. Instead, they can alter chemical tags around DNA, changing how easily cells use certain genes.
A new study found that one month on a vegan diet changed chemical tags on DNA linked to inflammation, energy metabolism, cell growth, and aging.
The findings do not show that a vegan diet prevents disease or reverses aging. Instead, they show that the body can respond to a major dietary change within just a few weeks.
The team included researchers from the University of California San Diego (UC San Diego). Researchers from the University of Freiburg in Germany also took part.
Diet changes gene activity
The work focused on DNA methylation, which adds chemical tags called methyl groups to DNA.
More tags near a gene can make it less active, while fewer tags can make it easier for cells to use.
“Our genes are not our destiny,” said Dr. Jerome Mertens, a co-senior author of the study. “The remarkable finding isn’t simply that one diet outperformed another.
“It’s that the epigenome responded measurably in just four weeks, showing that our biology is far more dynamic, and responsive to everyday choices, than we often assume.”
Two diets reveal rapid changes
The analysis used blood samples from 48 healthy adults who normally ate animal products. Everyone first followed the same mixed diet for one week, giving the team a common starting point.
The participants then entered one of two groups at random. Twenty-four followed a vegan diet for one month, while 24 ate a meat-rich diet.
Both plans supplied similar amounts of energy, so weight remained broadly stable. This design helped separate food composition from the effects of reduced calories or weight loss.
The team checked more than 812,000 places on the DNA before and after the diets.
Each person’s natural DNA pattern had the biggest effect, but the vegan and meat-rich diets still caused some noticeable differences.
Blood cells shift with diet
Blood contains different types of immune cells, and each type leaves its own pattern on DNA.
The team used these patterns to estimate how many of each immune cell were present. They then checked those estimates against actual blood cell counts from the original trial.
After one month, the vegan group appeared to have fewer neutrophils, which can increase inflammation. It also appeared to have more CD4 T cells, which help control immune responses.
“That agreement told us we weren’t just seeing changes on a computer screen – we were detecting real and meaningful biological changes,” said Lukas Karbacher, the first author.
Gene pathways respond differently
The team then looked at chemical tags (methylation patterns) near the parts of DNA that control whether genes are switched on or off.
In the vegan group, more chemical tags appeared near genes involved in mTOR and Hippo signaling. These two systems help control how cells grow.
Other changes suggested that the body was using less fat for energy. The vegan diet also affected genes involved in insulin control, DNA repair, cell stress, natural cell death, and cell growth.
Some affected pathways also appear in cancer biology, but the trial did not measure tumors or future diagnoses. These molecular patterns cannot show that the diet treated or prevented cancer.
The broad pattern suggests that food composition can influence groups of genes working together. It does not identify one responsible ingredient or show whether the shifts last.
Aging clocks response to vegan diets
The researchers also used special tools called epigenetic clocks. These tools look at chemical tags on DNA to estimate how the body may be aging.
Different clocks measure different parts of aging, so they do not always give the same result.
PhenoAge is a tool that estimates aging based on health and disease risk. Its estimate dropped by about 1.7 years in the vegan group but rose by 0.56 years in the meat-rich group.
GrimAge moved in the same general direction, with a 0.54-year decrease during the vegan diet. However, the difference between diets did not reach statistical significance.
The Blood&Skin clock, designed mainly to track chronological age, produced the opposite result. Its estimate rose by 0.61 years in the vegan group and fell by 0.61 years in the meat-rich group.
Different clocks measure different biology
“These findings reinforce the idea that not all measures of biological aging capture the same biology,” said Dr. Mertens.
“The clocks associated with disease risk and overall health consistently pointed in the same direction, suggesting the dietary changes were influencing pathways tied to health rather than simply the passage of time.”
A shifting clock estimate does not mean anyone literally gained or lost years of life. The clocks tracked short-term methylation changes that may reflect metabolism, immune activity, or temporary responses.
Results need more testing
The study was small. It included only 48 healthy adults and lasted just one month.
The results could differ in a larger group or among older adults and people with long-term health conditions.
The methylation differences were modest. No individual sites remained statistically significant after correction for the large number of comparisons, so the pathway findings should be considered preliminary.
The vegan plan was not a strict whole-food diet. Some participants ate extra nuts, oils, or granola bars to maintain 1,800 to 2,000 calories per day.
The trial measured molecular markers rather than future health outcomes. Longer studies are needed to determine whether the changes persist and lead to lower inflammation, reduced disease risk, or healthier aging.
Food choices affect biology
“Our study adds to growing evidence that nutrition can shape biology at the molecular level,” noted Dr. Max Storz, a co-senior author.
“The next step is to understand whether these epigenetic changes persist over time and whether they translate into meaningful improvements in long-term health. That will require larger clinical studies, but these findings provide an important foundation.”
Dr. Storz also noted that diet composition, rather than reduced calorie intake, drove the findings.
The main finding is not that a vegan diet reverses aging. Instead, it shows that changing what people eat can affect the body’s cells in just a few weeks.
The study was published in the journal MedComm.
